Ratatouille
My friend Janet, she of the superb vegetable garden, sent me home with boxes of vegetables.
I forsee ratatouille in my future!
Dice sweet peppers and onion, and gently sauté in some olive oil
Then top with peeled and juiced tomatoes that were also diced. Simmer some more.
Janet gave me a proper courgette, voluptuously shaped. Sliced, dusted with salt
and allowed to sit and weep away some moisture. Pat dry, and sauté until lightly golden.
I had my choice of plump or long skinny Japanese eggplant. Chose the latter. Slice,
salt, pile in a colander to weep excess moistue. Pat dry, and sauté. Getting close!
In saucepan layer the vegetables - tomatoe / pepper / onion, then some courgette,
eggplant, tomato medley, courgette & eggplant, tomato layeron top. Simmer gently.
And voilà it is now ratatouille, something I enjoy hot, room temperature, or cold,
as a side dish or on its own. I think I could even eat it as dessert, I love it so much.

Black Swallowtail Butterfly
There are butterflies this year, but fewer, not as many as expected.

Storm Isaias
Tropical storm Isaias arrived yesterday, 4 August, with 4.87 inches of rain. Power went out about 2:30 p.m.. not restored untilFriday afternoon. At that, we were fortunate. Only two day outage and we have a whole house generator. Others in the area and surrounding states were much more severely impacted. Out of state repair crews and their equipment were brought in to deal with the situation.
Route 12 closed towards Horseshoe Bend Road. Tree down took power poles and wires with it.
The Nishisackawick Creek in full spate, racing towards the Delaware River.
Creek powerful enough that it tore out the edge of aptly named Creek Road.
Asphalt undermined and collapsed, the large rocks protecting the creek edge also gone.
Our neighbor's sheep pasture is often inundated but not like this,
knocking over the fence and fence posts on the far side of the field.
